YIELD: 4 servings
1 pound of lean ground beef or turkey
1/2 cup of bread crumbs
4 tablespoons of smokey barbecue sauce
4 tablespoons of ketchup
1/2 teaspoon of salt
1/2 teaspoon of black pepper
1 tablespoon of dijon mustard
1/2 cup of cilantro
1. Preheat oven to 350 degrees F. In a large bowl, using your hands to mix together the ground beef or turkey, bread crumbs, 2 tablespoons barbecue sauce, 2 tablespoons ketchup, mustard, the salt/pepper, mustard, and cilantro. Do not over mix the meat.
2. Shape the mixture into a long, thick log and place in an baking dish. Do not to pack the meat too tight or you'll end up with a very dense loaf.
3. In a small bowl, whisk together the remaining tablespoons of barbecue and ketchup. Spread evenly over the meatloaf bake for 45 minutes. Slice and enjoy!
